Avalanche Bars


Confession: I am slightly addicted to pinterest. And more specifically, to pinning food on pinterest...and mostly, dessert foods. Another confession: I have a thing for rice krispie treats. I could eat an entire pan by myself. Once, while pregnant, I found myself in bed with a pan of rice krispie treats in my lap - half gone. I made Mike take the pan away from me before I could make the claim that I actually did eat an entire pan of treats by myself.


I found these little bars a while back on Pinterest and thought they looked yummy. I was right. So good and could be quite addicting - although they are sweeter than just your regular rice krispie treats, so I think I'm safe from eating the entire pan by myself.


Avalanche Bars

  • 12 oz bag of white chocolate chips
  • 1/4 cup creamy peanut butter
  • 3 cups Rice Krispies cereal {generic brand is fine too!}
  • 1 1/2 cups mini marshmallows
  • 1/4 cup mini chocolate chips + 2 Tbsp for garnish

Lightly grease a 9×9 pan {or 8×8 if you prefer thicker bars}.

Pour the white chocolate chips into a medium microwave-safe bowl and heat on medium power for 1 minute. Stir and continue in 30 second increments until the chips are completely melted.

Add the peanut butter to the melted chocolate and stir until completely combined.

Stir in the rice krispies. Let cool approx 5-10 minutes, stirring every few minutes or so to help cool.

Add the marshmallows and the mini chocolate chips and stir to combine.

Pour the mixture into the prepared pan and spread evenly, pressing lightly with the back of your spoon, but not too hard - otherwise they will get hard.

Press the remaining chocolate chips into the top for garnish.

When the bars are completely cooled, cut into squares and enjoy!
